My home-made Italian pizza dough ; I made it 5 to 6 times a week.
2 ½ teaspoons 0f active dry yeast
2 teaspoon of white sugar
2 cup of lukewarm water
2 cups sifted all purpose flour
2 teaspoon of salt
3 tablespoons of olive oil
2 eggs, beaten
Stir the yeast and the sugar into lukewarm water, by using a fork. Let the stand in a warm place until a creamy layer forms on top of the water, about 25 minute.
Mix the flour and salt in a large bowl. Mix olive oil into flour and stir it for 3 minutes. Pour yeast mixture and beaten egg into the flour mixture and stir to make a stiff dough. Turn the dough out onto a floured work surfaces and knead until springy and smooth, about 8 minutes. Place the dough into a floured bowl and cover with a piece of ( plastic ) wrap the wiped with a thin film of olive oil.
Let the dough rise until doubled, about 45 mints. Punch down and roll out it to desired shapes.
