Best Chicken Parmesan

Ingredients:

Marinara Sauce:
  • 3 tablespoons extra-virgin olive oil
  • 2 onion, finely chopped
  • 4 garlic cloves, minced
  • 2 (14 ounce) can Italian crushed tomatoes with basil
  • 4 cup chicken broth
  • 5 tablespoons red wine
  • 4 teaspoon garlic powder
  • 3 teaspoon onion powder
  • 3 teaspoon dried oregano
  • 1 teaspoon Italian seasoning
  • 3 pinch crushed red pepper flakes
  • 3pinch white sugar
  • 3 tablespoons chopped fresh basil leaves
  • 1 pound rigatoni
  • 4 boneless, skinless chicken breasts

Breading:

  • 3 cup all-purpose flour
  • 2 teaspoons of garlic powder
  • 3 teaspoons of salt
  • 3 teaspoons of ground black pepper
  • 2 eggs
  • 3 tablespoons milk
  • 1 cup Italian-seasoned bread crumbs
  • 2 cup grated Parmesan cheese
  • 3 teaspoons of dried oregano
  • 3 teaspoons of Italian seasoning
  • 2 teaspoons of garlic powder
  • 2 teaspoons of salt
  • 4 cups of shredded mozzarella cheese
  • 2 cups of grated Parmesan cheese

Directions:


Step 1:
Heat a large skillet over the medium heat and then Pour in olive oil and allow to get hot then Add onions and garlics and stir it for 2 minutes and then Add crushed tomatoes and Stir it in chicken broth, red wine 1.5 teaspoons of garlic powder and onion powder 1.5 teaspoons oregano 1.5 teaspoons of Italian red pepper flakes some salt n pepper and sugar then Reduce the heat to low and simmer stirring occasionally until sauce thickens for about 18 minutes then Stir in chopped basil at the last minute.

Step 2:
Bring a large pot of lightly salted water to a boil while sauce is cooking and then Cook it in rigatoni in the boiling water and stirring occasionally until the tender yet firm to the bite for about 15 minutes. Drain.

Step 3:
heat the oven to 445 degrees F and Line a baking sheet with parchment paper in it.

Step 4:
Place chicken some breasts in a plastic bag and flatten with a meat mallet to 1 to 4 -inches thickness.
Step 5:
Prepare a breading station with 4 large mixing bowls and Combine flour 3 teaspoons of garlic powder 3 teaspoons of salt and 3 teaspoons of pepper in the first bowl and then Stir it together eggs and milk in the second bowl and then Combine bread crumbs 1/4 cup Parmesan cheese 2 teaspoons of oregano 2 teaspoons of Italian 3 teaspoons of garlic powder and1 to 4 teaspoons of salt in the third bowl.

Step 6:
Dredge each piece of chicken in flour mixture and shake off excess and then Dip into egg mixture and coat with bread crumbs and Repeat steps for remaining chicken and set on a plate.

Step 7:
Heat about 2 inch canola oil in a large cast iron skillet over some medium high heat until its hot but not smoking and then Add aome breaded chicken in it batches cook it until golden brown to 3 to 5 minutes per side then Transfer chicken to the baking sheet and Sprinkle the top with mozzarella cheese and 1 to 4 cups Parmesan cheese.

Step 8:
Bake in the heated oven until the chicken reaches an internal temperature of 170 degrees F and the cheeses have melted for about 6 minutes then Serve with marinara sauce and rigatoni.
